In honour of the pumpkin season, I wanted to get some festive baking in and went a little over board on how much I made! But I wanted to quickly share what I made for some delicious Fall treats!

Healthy (ish) Gluten Free Pumpkin Bread!
I found this boxed pumpkin bread mix by XO Baking Co. that was only $9.00, gluten free, non-GMO, and supposedly really good, so I had to give it a try!
The mix needed a few additional ingredients like vegetable oil (I substituted coconut oil), water, eggs, and pumpkin puree.
Something I didn't know when buying pumpkin puree....IT HAS 3.5 CUPS IN A CAN!!!!! There was sooo much pumpkin puree that I ended up making this (using only 1 cup) and then making nearly 30 cookies after that and STILL HAVING SOME LEFT OVERRRR! So pro tip: If you buy pumpkin puree, make sure you are planning to make a lot of pumpkin based items, cause there was way too much lol.
